Coconut Beetroot Chia Seed Pudding

Absolutely love a good chia seed pudding. Especially one that's packed with so much nutritional goodness.
Aside from its vibrant colour, you would never know there was beetroot in this delicious chia seed pudding. Blume's Beetroot Blend has notes of warm spices that makes this chia seed pudding taste like a coconut chai. Beetroot is rich in nitrates which may help with blood flow, fight inflammation and boost energy.

Ingredients: 
- Splash of hot water
- 1 tsp of Blume Beetroot Blend
- 1/2 cup coconut milk
- 1/4 cup vanilla oat milk (or nut milk)
- 1 tbsp pure maple syrup or to taste
- 3 tbsp of chia seeds
- vanilla flavoured coconut yogourt (or any plant based yogurt for topping
 
Directions:
Mix 1 tsp of Blume's Beetroot Blend with a splash of hot water. Stir well. Set aside. In a jar, add all ingredients including beetroot mixture. Stir well. Allow to settle for a few minutes then mix again until there are no longer any clumps. Cover jar and store in fridge for at least 2 hours to overnight. Top with coconut yogurt and your choice of toppings: fresh fruits, shredded coconut or granola. Enjoy!
